Each course will be accompanied by a curated beverage pairing from the Riboli family of brands\, with selections spanning wine\, spirits and specialty pours designed to complement Chef Cris’ menu. \nMore than a traditional wine dinner\, Rooted in Flavor is an exploration of how food and drink can tell a story together\, bringing Chef Cris’ heritage to the table through unexpected pairings\, bold flavors and a modern Sal Y Mar perspective. \nMenu: \nFirst Course | Piña Glazed Shrimp \nSeared jumbo shrimp with caramelized pineapple glaze\, avocado purée\, charred pineapple salsa\, ají dulce oil and crispy plantain. \nSecond Course | Auyama Velouté \nCreamy Venezuelan squash soup finished with blue crab\, sweet corn\, queso fresco espuma\, cilantro oil\, toasted pepitas and micro herbs. \nThird Course | Asado Negro de Short Rib \nSlow-braised beef short rib lacquered in traditional asado negro reduction\, served with silky yuca purée\, roasted baby carrots and panela jus. \nFourth Course | Cachapa de Tres Leches \nWarm corn cake\, coconut tres leches\, tropical compote and toasted cacao nibs. \nThursday\, October 29 | 6 PM \n$150 (includes gratuity) \nSpace is limited and advance reservations are required.
